Ingredients

12 Kirby or Pickling Cucumbers
2 Large White Onions
16 Sprigs of Fresh Dill
4 Drops of Young Living Vitality Dill Essential Oil

Brine
4 Cups Sugar
4 Cups Vinegar
1/2 Cup Salt
1 1/2 tsp Turmeric
1 1/2 tsp Celery Seeds
1 1/2 tsp Mustard Seeds

Directions

Combine brine ingredients in a large stainless steel, glass or ceramic pot. (Pots made from aluminum, copper or cast iron will give your pickles a metallic taste because of the high acidity of the vinegar.) Bring to a boil and then reduce to a simmer. Let the brine cool as you prepare the cucumbers and onions.

Cut the cucumbers into slices with a fancy cutter (my grandmother’s word, not mine!). Then thinly slice two large white onions (peeled).

Divide cucumbers and onions into 4 wide-mouth large mason jars (24 oz jars work well). Then put 4 sprigs of dill and 1 drop of dill vitality oil in each jar. Pour cooled brine in each jar. Screw on lids securely and refrigerate.

Serving Suggestions

Right out of the jar! You can dress them up by putting them in a crystal bowl…if you’re that kind of fabulous today!
