pear jam

This is such an elegant jam – subtle and nuanced.


 

Ingredients

1 quart finely chopped, cored, and peeled pears
5 cups sugar
1/4 cup lemon juice (for acid)
1 pouch sure-jell
1/4 cup or more of Amaretto Simple Syrup (see Almond Pears recipe)

Directions

Combine fruit, sugar, and lemon juice in a large saucepan. Bring slowly to a boil, stirring until sugar dissolves. Stir in liquid pectin. Return to a rolling boil. Boil hard 1 minute, stirring constantly. Remove from heat. Skim foam if necessary. Ladle hot jam into hot jars leaving ¼-inch headspace (properly prepare and sterilize jars and all equipment for canning.)  Adjust two-piece caps. Process 15 minutes in a boiling-water canner.
